Canada has a unique and fascinating food history. It begins with the First Nations and the riches of the land. In the 19th century, while each wave of immigration bring their own foods, pioneers and labourers must adapt their early kitchens to the landscape. In the 20th century, concern about nutrition assumes a central role and technological innovations would deeply transform the Canadian kitchen.
